House Made Hospitality Announces Four Glamorous Venues Inside Sofitel Sydney Wentworth

From the creators of Hinchcliff House, Martinez, and Promenade Bondi Beach comes an exciting new venture at Sofitel Sydney Wentworth. Four venues are set to open by the end of the month, with the first being tilda & bar tilda.

Sofitel Sydney Wentworth, a luxury hotel that has been a part of Sydney’s history for nearly six decades, is undergoing a major transformation. As part of a $60 million renovation, the hotel is welcoming a fresh era of dining, and we can’t wait to see what one of our favourite hospitality groups, House Made Hospitality, has in store.

Hotels have quickly become top dining destinations in Sydney, with new spots like Pont Dining at the Intercontinental, BTWN at W Hotel Sydney, and Sydney Common at Sheraton Grand leading the charge. House Made Hospitality is stepping up to join these ranks, having already earned a stellar reputation with fan-favourites like Easy Tiger, and recent hits Martinez and Promenade Bondi Beach. They’re bringing their magic to Sofitel Sydney Wentworth, starting with tilda & bar tilda on the 9th of October, with two more venues to follow.

tilda’s menu, crafted by chef Nathanael Merchant (ex-Bentley), will spotlight Australian ingredients while paying homage to the hotel’s mid-century heritage. This 110-seat luxury diner will showcase Australian-sourced seafood cooked over charcoal, blending refined cuisine with a laidback Aussie vibe. Expect standout dishes like grilled Murray cod and a spectacular surf and turf featuring rib-eye and lobster, along with a theatrical tableside bread and butter service. House Made Hospitality’s goal is to create a welcoming space that appeals to both hotel guests and locals alike. Sommelier Paul Sadler (ex-Chophouse) will curate the wine list, focusing on small-batch, contemporary, and progressive winemakers.

bar tilda, with its live jazz nights, bespoke martini card, and extensive Australian whiskey list featuring over 100 varieties, is set to become a destination bar. Cocktails with creative names like “Ringo Loves a Blueberry” (a tribute to The Beatles’ 1964 tour) add to the bar’s playful yet sophisticated charm. With its old-world elegance, bar tilda promises to be far more than your typical hotel watering hole.

The restaurant’s name, tilda, is a nod to Australian culture, with the name being a playful take on “Waltzing Matilda.” The interiors feature a colour palette of ochre, blue, and sandy beige, subtly referencing Australia’s landscapes. “We don’t know many Australian restaurants that avoid being too kitsch,” says Justin Newton, Director of House Made Hospitality. “There’s no VB cans or Crocodile Dundee posters on the walls.”

Later this month, House Made Hospitality will unveil two more exciting venues at Sofitel Sydney Wentworth. Wentworth Bar, located on the hotel’s famed level-five terrace, and Delta Rue, a Vietnamese-French restaurant, will round out this dynamic new dining offering.
