Chef Peter Conistis brings us more Greek goodness at Ela Ela, his new meze-style dining experience inside the reimagined space of The Bristol.
Here to prove that everything he touches turns to gold, celebrated Greek-Australian chef Peter Conistis has done it again. After the success of his much-loved venues Alpha, Ploos, and Ammos, Conistis has now opened Ela Ela inside the newly renovated The Bristol on Sussex Street.
Step through The Bristol’s classic pub into an inviting, open space that feels like a Mediterranean oasis. With modern terrazzo-style tables, neutral and khaki tones, and traditional Greek lifestyle prints, the venue oozes style and warmth. And as with all of Peter’s venues, you can watch the kitchen team in action, bringing authentic Greek cuisine to life.
This time, the menu is all about Meze dining – small, shareable dishes celebrating Greece’s social dining traditions. With nothing on the à la carte menu over $28, Ela Ela is an approachable way to bring people together.
Peter’s renowned Greek warmth is infused into every corner, from the cosy decor to the friendly service, making this spot feel like a true extension of his hospitality.
The menu is rooted in Greek tradition but also hints at other Mediterranean neighbours. Start with a selection of hot and cold meze, like fluffy wood-fired pita with fresh taramosalata, tzatziki, and Htipiti which is a whipped feta dip that has been baked with roasted peppers and walnuts. Then there are the Kinkawooka mussels served dolmades-style.
The woodfire grill brings depth to many of the dishes, infusing them with smoky flavour. Peter’s signature halloumi appears here with candied olives and lemon, and his famous spanakopita, filled with leek, feta, and spring greens, has the perfect balance of flaky pastry and soft filling. Our standout was the Manestra which features perfectly done roast chicken thigh, kasseri and a fragrant tomato kritharaki to absorb all the flavours.
For those who’d rather leave the selections to the experts, Ela Ela offers excellent $60pp and $75pp set menus.
The drinks menu surprised us with unexpected yet delicious cocktails like the Lamb Roast made with lamb fat-washed bourbon and apricot brandy, and the Ela Pickle Margarita featuring mezcal, tequila reposado, pickle juice, burnt lime, and Greek chilli. The wine list offered a thoughtful selection of Greek and Australian options.
Ela Ela is sure to become one of Sydney’s new favourite spots – a place you’ll want to return to again and again. Book your table here.
