The Team Behind Sydney’s Pioneering Turkish Restaurant Move Into Barangaroo

Efendy Group (Efendy, Anason, and Maydanoz) have launched a new neighbourhood kebab bar, Tombik, promising Sydney’s first truly authentic Turkish kebab experience. 

Tombik will mark the fourth Turkish-inspired eatery from the rapidly growing hospitality group and its most casual to date. The 45-seat neighbourhood kebab-bar is dishing up an Anatolian street-style menu, in an ode to one of Turkey’s most famous contributions to global street-style food – the doner kebab.

Offering a point of difference to the suited and booted eateries that line Barangaroo, Tombik embraces a no-fuss, no frills, come-as-you-are style of service inspired by the cosy cocktail bars of Taksim and Istanbul. Celebrated Turkish chef Somer Sivrioğlu and business partner Tarik Köni aims to showcase a truly authentic kebab bar, one that is not synonymous with a 2 am food fix, instead bringing exquisite all-day Turkish dining to life, highlighting delicious homemade doner kebab with all the trimmings.

Eponymously named traditional Tombik bread cooked in the wood-fired oven will be a staple on the menu, serving as the ultimate vessel for your kebab protein of choice, including; house beef rump using the finest Wagyu beef from Rangers Valley, NSW; lamb belly; and falafel. 

If a classic Doner isn’t your thing, perhaps an Iskender will tickle your pickle, your choice of protein over chopped bread drizzled with house-made tomato and capsicum sauce and yoghurt, every element made fresh in-house. 

Other street food favourites include biber flatbread with chilli and tahini, silky hummus, and pistachio baba, the perfect accompaniment to the Mediterranean-inspired beer list including EFES Pilsener and Bomonti Malt Beer from Turkey, Mythos Hellenic Lager from Greece and Almaza Lager from Lebanon; in addition to local favourites such as Young Henry’s and Sydney Beer Co and an intriguing selection of unique cocktails created using traditional ingredients such as shalgam (pickled turnip and chilli juice).

The inviting interior features a large wood-fired tombik oven as the centrepiece, alongside a floor-to-ceiling liquor library lined with timber detailing, slate stone, velvet seating, and Ottoman era-inspired tiles for an ambient backdrop to your authentic kebab feed.
