Head down to The Dolphin Hotel all throughout May and June, where they’ll be celebrating the ‘Return Of The Classics’, bringing back all your Dolphin Italo favourites for 8 weeks straight. It’ll be a carb-loaded journey inspired by the diverse regions of Italy, with a selection of 8 pastas on the menu rotating weekly.
The Dolphin is no stranger to housing delicious Italian food, with the menu reflecting the best of Italian Australian fusion. In charge of bringing back all the classic pasta dishes are Executive Chef Danny Corbett and Head Chef Aldo Lara. The flavours are rich and nostalgically nods to The Dolphin Hotel’s past menus, starting off with Bucatini all’Amatriciana (a signature and crowd favourite).
Other weeks include Linguine Alle Vongole with little neck clams, Lord of All Ragu on Week 3 featuring a tender 12-hour braised pork shoulder, a creamy parmesan drenched Fettuccine Alfredo, Gnocchi Al Gorgonzola with mascarpone and the best saved for last, the 70s iconic comfort pasta, Tortiglioni alla Vodka on week 8. Eat your way through Italy with pastas costing $25 a plate, or add on a glass of natural vino (Favide Spillare “The People Are Thirsty Fancy Goon” from Veneto or a 2021 Babo Chianti Classico from Toscana) for just $10 extra.
Still feeling peckish? There’s plenty more to order from The Dolphin’s A La Carte menu. Pair your pasta with La Stella Burrata served with a tangy chardonnay mignonette or Grilled Octopus Salsa Verde with green olives and kipfler. For dessert, choose from Tiramisu with coffee drenched savoiardi and Tasmanian mascarpone or opt for a savoury Cheese Board with cheddar, brie and stilton, served alongside spiced chutney and bread.
