The Sutherland Shire has a new dining destination to boast about with the recent opening of Fior. Brought to you by the acclaimed team behind Surry Hills favourites Jane and Arthur, Fior promises a fresh take on Italian cuisine, delivered with a warm Aussie charm.

Nestled within a charming old clock tower in the heart of Gymea, Fior instantly establishes itself as a local landmark. Stepping inside reveals a light-filled haven brimming with character. Think of an open kitchen buzzing with activity, a beautiful bar perfect for social gatherings, and an expansive wrap-around terrace that transforms throughout the day, offering sun-drenched seating or cozy warmth depending on the season.

Fior’s philosophy revolves around creating a welcoming atmosphere that caters to all occasions, whether it’s a long lunch with girlfriends over plates of house-made charcuterie and fresh seafood antipasti, a celebratory family gathering around steaming bowls of pappardelle with pork sausage ragu, or an intimate date night enjoying delicate crudo and a perfectly crafted Cinque Terre margarita.

“We’ve been overwhelmed with the local support for Fior,” says restaurateur Tristan Rosier. “It truly motivates us to create a dining destination that exceeds expectations. We want Fior to be a place where people feel comfortable, have fun, and create lasting memories.”

The menu, curated by Rosier and head chef Will Lawson, embraces a casual and social dining style. Start your culinary journey with a selection of over 18 antipasti, featuring house-made delights like LP’s mortadella, creamy burrata with Vanella’s touch, and Sydney rock oysters – each bite a celebration of local artisans and producers.

Fior takes pasta seriously, with their Italian-made pasta extruder churning out 18kgs of fresh goodness every hour. Guests can embark on a delicious odyssey through various dishes, from the vibrant pesto flavours of mafalde corte to the classic comfort of spaghetti with pippies and bottarga. Heartier appetites will be satiated by the selection of main courses, including succulent O’Connor Superior Angus beef steak, chicken with the tangy kick of radicchio and balsamic, or the smoky allure of grilled prawns with nduja.

For those seeking a complete and carefree dining experience, Fior offers a set menu at $85 per person. This delectable journey includes a generous selection of antipasti, a choice of pasta perfection (think pesto and stracciatella or the rich pork and fennel sausage ragu), a satisfying main course like chicken with radicchio and balsamic, and a delightful tiramisu to end on a sweet note.

And then there’s dessert. Fior takes sweet indulgence to a new level with a roaming gelato trolley, allowing guests to select their favourite flavours tableside. Fior’s impressive cocktail list boasts a range of Italian classics with a modern twist. Between 4-5 pm daily, Fior transforms into the Shire’s go-to spot for Aperitivo hour. Unwind with a selection of discounted drinks and delicious bar bites, like $2 Sydney rock oysters, the crispy indulgence of crumbed scallops, or the savoury comfort of pumpkin and taleggio arancini.
