Ketel One Botanical has partnered with the world’s first permanent no-waste bar to launch an alfresco dining space in South Eveleigh.
To keep you in the Summer frame of mind, Matt Whiley has launched the Ketel One Botanical Terrace as part of his pioneering regenerative drinking space. Re opened its doors earlier this year as Sydney’s first boundary-pushing no waste bar in the newly restored South Eveleigh precinct. From the materials and the glassware used within the space to the ingredients and garnishes used in each cocktail, everything is brought to the consumer with sustainability in mind.
The decked-out 40 seater terrace will be no different, offering up a sanctuary for your post-work tipple and late nights that is guaranteed to have a positive impact on the planet. The indigenous company who designed the native rooftop at the precinct will be decking out the area with native plants, grasses, and come spring, organic botanicals to complement the drinks. The space is cosy with cute check blankets providing warmth in the colder months.
The drinks list will of course hero Ketel One Botanicals, a premium spirit distilled with botanicals and infused with natural fruit essences. The brand is also incredibly sustainable with the founding family building the world’s largest windmill to help power their distillery.
The cocktails have been created with surplus produce designed to divert waste and showcase innovative techniques, which Whiley hopes inspires other bartenders. Expect concoctions like the Nectarine & Vetiver Negroni with Ketel One Botanical Peach & Orange Blossom, Tanqueray, Cocchi Di Torino, Campari, Nectarine and Muyu Vetiver, Disco Juice with Ketel One Botanical Cucumber & Mint, Feijoa Gin, Jasmine, Anise Myrtle and soda, as well as Whisky Highball with Ketel One Botanical Peach & Orange, Blossom, Johnnie Walker and yuzu soda. Each sip tastes like the Summer vacay you’ve been missing.
The food menu will be the same as Re – if it ain’t broke… Designed by Chef Alex Prichard (Icebergs) and Nic Wong (Cicciabella), each item showcases local growers and fresh seasonal produce. Tuck into menu favourites including puffed offal crackers, pickles, oyster handroll, or if you’re more pecking, eggplant ceviche and XO pasta.
The Ketel One Botanical Terrace will be open Tuesday – Saturday, 4pm – 12am.
