Merivale finally launches The Paddington

Let us welcome the newest addition to Paddo’s drink and dine scene… The Paddington! Launching on Tuesday 24th November, we’re excited to try Justin Hemme’s latest offering. Clearly, hospitality giant Merivale is going from strength to strength following the recent opening of J&M Whisky Bar at Angel Bar.
At once a pub and restaurant, The Paddington reflects a different speed to the company’s previous offerings. The focus here is on honest, hearty, good food complemented by clever seasonal sides including the not-to-be-missed fries. With Executive Chef Ben Greeno (ex-Momofuku Seiōbo) at the helm, there is plenty of tantalising dishes on offer. The menu has been designed around the triple custom-made French rotisserie that’s situated in the heart of the venue. Juicy chicken, succulent lamb and tender beef rump, flavourful seafood and tasty celeriac? Take your pick!

Mixmasters and Palmer & Co. alumni Sam Egerton and Toby Marshall are in charge of the cocktail menu. Whilst Merivale’s Master Sommelier Franck Moreau and Adrian Filiuta, the head sommelier of Felix and winner of the 2015 Australian Ruinart Sommeliers Challenge have curated the wine list.
