Join us at Hinchcliff House’s second-level venue, Lana, a prominent hotspot in Sydney, on the 24th of October 2023, for an experience that will transport you to the rugged terrain of Utah’s mountains.
This event presents a unique opportunity for whiskey enthusiasts and novices alike to indulge in an educational and unforgettable experience. The specially curated 4-course menu has been meticulously designed to accentuate the exceptional flavours of High West’s renowned whiskeys.
High West Whiskey is renowned for its unwavering commitment to crafting whiskeys with unparalleled character and distinction. Rooted in tradition and innovation, High West’s spirits encapsulate the rugged essence of their mountainous origins. Founded in 2006 by David and Jane Perkins, it achieved the distinction of becoming the first legal distillery in Utah since 1870. Motivated by the fascinating parallels between the fermentation and distillation process and biochemistry, David took the bold step of relocating his family in 2004 to Park City, where they embarked on distilling in 2007. Their choice of Park City was driven by David’s deep admiration for the Old West and Utah’s lesser-known whiskey history.
The menu, thoughtfully designed to complement High West’s signature whiskeys, promises a culinary journey like no other. The whiskey tasting will feature an array of remarkable selections, from the bold and spicy Double Rye to the rich and full-bodied Bourbon, as well as the unique smokiness of Campfire. Additionally, a surprise tasting from the High West Cellars awaits.
The night will commence with High West Double Rye, perfectly paired with Corn Bisque Clam Chowder served with crab meat in a shot glass. The second course features High West Bourbon, harmonising seamlessly with Torched Whiskey-Glazed Salmon Crudo, complemented by cucumber, buttermilk, and sorrel dressing.
The third course takes center stage with High West Campfire, an ideal companion for the Brooklyn Valley Pasture-Fed Striploin, adorned with whiskey jus and broadleaf rocket. The grand finale awaits with a surprise High West Whiskey, exclusively available at the High West Whiskey Dinner, and paired with a sumptuous Chocolate, Whiskey, and Wattleseed Tart.
