Fabbrica Bakery brings fresh loaves of bread, sell-out sandwiches, and gourmet baked goods to Rozelle.
Sydney’s beloved weekend pop-up bakery, Fabbrica Bread Shop, has now found itself a permanent home in Rozelle, bringing back its famous sell-out sandwiches and focaccia slices. This is another opening to add to the Love Tilly Group’s portfolio, joining the ranks of already famous Sydney venues Ragazzi, La Salut, and most recently, Palazzo Salato.
Fabbrica Bread Shop is housed on Darling St inside Maloneys Grocer, and is open seven days a week reviving missed crowd favourites from its legendary pop-up days. Enjoy the likes of Tathra Place pork and fennel sausage rolls, chocolate-filled bomboloni, and banoffee tarts that will have you coming back for more. The bread shop will also feature sandwiches and baked cookies, created by the team’s talented Head Baker, Aniruddha Bhosekar. Having trained at Mumbai’s oldest hospitality institute, Bhosekar has been responsible for all of Love Tilly Group’s extraordinary baked goods, from the caramelised-crusted sourdough at Ragazzi to La Salut’s custom pan de cristal.
The rotating baked treats on offer at Fabbrica Bread Shop range from sweet to savoury. Sink your teeth into bronze-flaked pithiviers or cross-laminated masala croissants, with a spiced potato stuffing reminiscent of dosas. On weekends you’ll find vindaloo pies, made from the finest goat sourced from the Gourmet Goat Lady, as well as pillow-plush maritozzis (Roman-style cream buns that melt in your mouth), chocolate tarts, and coiled morning buns.
Bread is stocked with the beloved Fabbrica flagship sourdough, the very same that graces the tables of Love Tilly Group venues. This loaf is the result of an intricate and meticulous three-day process that involves the blending of three distinct flours sourced from Wholegrain Milling in Gunnedah, NSW. Each batch undergoes over 24 hours of proofing before being baked fresh on-site every single day.
The intimate space seats up to 24 diners, with coffee by Inner West roasters The Little Marionette to pair with the pasties and sweets. You can also expect a small selection of beer, wine and spritzes available – the perfect companions for a refreshing lunchtime tipple. “Fabbrica Bread Shop takes the Fabbrica experience into the suburban sunshine. It’s everything you want in a great local bakery” says Love Tilly Group co-owner Matthew Swieboda.
