Introducing La Salut, Redfern’s New Catalan-Inspired Wine Bar

Love Tilly Group & The People have teamed up to welcome a new Spanish wine bar to the renovated Norfolk House & Hotel.

Sydney has no shortage of top-notch wine bars but we’re always up for welcoming another to the repertoire, especially when it’s from the team behind Ragazzi, Love Tilly Devine and Dear Sainte Eloise. The Love Tilly Group and The People (behind newly renovated The Norfolk House & Hotel) have combined forces to welcome a new Catalan-inspired wine bar to Redfern. La Salut is set to open this spring so you can play catch-ups with your loved ones over Spanish vino and share plates.

The Love Tilly Group opened their first wine bar back in 2010 and have since expanded their offering with pasta restaurant Ragazzi and sister store Fabbrica. Owners Matt Swieboda and Nate Hatwell are ready to get back to their wine bar roots and have been inspired by the bars and restaurants of Catalonia. The wine on the shelves, friendly hospitality and culture will transport you straight to a bar in Barcelona.

The 40-seat wine bar is housed inside the old sports bar of The Norfolk House & Hotel. It has been renovated to feature earthy tones and polished concrete with an alfresco dining option along Walker Street. La Salut will be a destination for Sydneysiders, but also a place for The Norfolk House guests to visit when they need a nightcap.

The distinctively cool branding might seem familiar and that’s because it’s the work of Jarmaine Stojanovic, responsible for the visual identity of Ragazzi and Fabbrica. The branding takes cues from Spanish architects, Caralan tiling and Cubist works and the theme follows in the venue.

Executive Chef and Co-Owner Scott McComas-Williams has created a Catalan-inspired menu to match. Snack will include a dish of mussels, hot sauce and chips (a homage to Morro Fi-a Barcelona vermouth bar McComas-Williams calls “the best place in the world”), anchovies, fried quail with morcilla spice and more. Larger dishes are designed to be shared and include octopus, grilled mackerel, house-made Catalan-style sausage with clams and more.

It wouldn’t be a Love Tilly Group venue without a wine list reaching double 00s. Swieboda will be introducing Sydneysiders to an array of rare and natural Spanish wines such as pétillant-naturel from Nuria Renom in Alt Penedès, wines aged in tinajas (old underground amphoras) and Ramiro Ibáñez’s oxidative Palomino-based whites.

If you taste a wine that you think belongs on your shelf at home, Swieboda will be overseeing the wine list in The Norfolk House & Hotel bottle shop so there’s a good chance it’s stocked in there.
