Coogee Pavilion Opens Its Long-Awaited Middle Floor Venues

After five years in the works, Merivale is throwing open to the doors to Coogee Pavilion’s highly anticipated middle floor today.

For those flocking to the Eastern Suburbs this summer, Coogee Pavilion is giving Sydneysiders another reason to head outside the Bondi bubble. This multi-level beachside icon continues to take prime position on the shores of Coogee Beach, with the Merivale team solidifying the venue’s place as a must-see destination. And this January, Coogee Pavilion will be opening its long-awaited middle floor just in time for the summer season.

Pinned as one of Merivale’s most ambitious projects to date, Coogee Pavilion’s middle floor boasts three epic new venues, each with a distinct and daring concept. Although each venue proves a destination in its own right, the trio of new openings is anchored by the cooking philosophy of Executive Chef, Jordan Toft (Bert’s, Bar Topa). The middle floor will be home to restaurant Mimi’s, cocktail bar Will’s and a wine and tapas bar Una Más. For diners, expect simple Mediterranean-style eats infused with a uniquely Australian touch.

For Toft, refining the concept behind these venues proved an important job. “This building is incredibly special to us, the community and to Sydney’s history. We felt a great responsibility to do it justice; taking our time to respectfully bring it to life and create experiences that are deserving of their location,” Toft explains. The floor’s design brings together Toft, Justin Hemmes and Merivale’s design team (including Bettina Hemmes, Vince Alafaci and Caroline Choker of ACME, and stylist Amanda Talbot).

At Mimi’s you’ll find a cool and calming dining room filled with fresh produce and made for great company. Diners will be met by arched windows and sweeping coastal vistas, with a simple yet elegantly constrained menu showcasing seafood, meat and vegetables at their best. There’s no smoke or mirrors here, just top-notch produce treated with a careful hand and served with ease.

For those looking for a tipple, Will’s serves up a charming cocktail bar that invites punters to escape reality for a drink or two. Set in a space with lively energy and charming interiors, expect a drink list inspired by the Italian coastline. From classic cocktails to locally-influenced mixes, they’ll be something for everyone on this list.

Last up is Una Más, a local wine and tapas bar with perfect for those looking for a ‘walk off the beach’ venue. With an undeniably Mediterranean soul, the venue’s uncomplicated menu fuses Spanish and Australian influences with dishes like anchovies on fresh bread, freshly shucked oysters and seafood off the plancha.
