Picture this: it’s Wednesday, 31st of May, and the award-winning Omnia Bistro & Bar is abuzz with anticipation. The spotlight is on a man of many talents: farmer, forager, winemaker, and long-time friend, Mark Foletta.
Culinary Director of LK Hospitality, Stephen Nairn, has curated a tantalising tasting menu for the occasion, paired perfectly with the aromatic wines from Foletta’s own label, Saffron Gramophone. Expect to be surprised with a few treasures hand-picked by Foletta from Omnia’s well-stocked cellar too.
To set the mood for the evening, renowned journalist and author, Dani Valent, will steer a captivating conversation with Nairn and Foletta. Get ready to deep-dive into the world of food, wine, and farming practices, all to the rhythm of Foletta’s favourite tracks.
The ‘Friends Of Omnia’ series is a testament to the close-knit relationship between Nairn and Foletta, a bond that has grown over the years. This friendship and mutual respect for food and its origins will be showcased in the evening’s menu, featuring seasonal delights like Abrolhos Island scallop with warm pumpkin sauce and spiced salt, a delicate pine mushroom tart, grilled yellowfin tuna, and a decadent chocolate and chestnut torte with pine mushroom ice cream.
Foletta’s farm ‘Yin Barun’, located near the north-eastern Victorian town of Benalla, supplies many of Melbourne’s top restaurants with sustainable produce. Omnia Bistro & Bar is among the privileged few to serve up these culinary delights.
