The story of this concoction began, as most great tales do, with a drink at a pub, which soon led to spirited conversations about cricket, humour, beer, and rivalry. The geniuses behind both distilleries, Cam Mackenzie of Four Pillars and Tom Warner of Warner’s, discovered they had quite a bit in common, especially their love for a good time, sustainable distilling, and the use of native ingredients.
While Cam had been making waves in Australia by steeping gin in Victorian Shiraz grapes, Tom was busy impressing the Brits with rhubarb gin crafted from rhubarb grown at their distillery. It wasn’t long before they hatched a brilliant plan – to create a collaborative gin that swapped their favourite ingredients.
The result? A sensational gin that combines freshly pressed rhubarb juice spirit with juicy green apples from the Yarra Valley. Four Pillars Green Apple & Rhubarb Gin starts with a juniper base, followed by botanicals like coriander, lemon myrtle, wattle seed, cacao shell, and brown spices. To bring in the apple touch, they’ve used lemons and local Pink Lady apples in the botanical basket.
But the real stars of the show are the rhubarb juice spirit from Warner’s and fresh green apples from the Yarra Valley. Blending three separate liquids – rhubarb juice, apple juice, and apple cider spirit – the gin achieves a harmonious balance of flavours.
The final product is reminiscent of apple and rhubarb crumble in a glass, perfect for a G&T, Highball, or Fruit Cup. It evokes the crisp autumn mornings of the Yarra Valley, with its ripening apples and gardens bursting with lemons and rhubarb.
