Everyone knows toasties and coffee are a match made in heaven, and Bae Dining has given us every reason to believe they do it best!
There’s few occasion a toasty isn’t welcome. Hungover? Hungry? Easy dinner? Drunken snack? Need to use the last of the Christmas ham? A toasty always hits the spot and Bae Dining has given us another destination to get this cheesy goodness. With Sydney institutions under their aprons including TOKKI, the Japanese/Korean eatery in Surry Hills, Marble, the more fine-dining version of TOKKI in Barangaroo and Kinhboy, the venue famous for Bahn Mi during the lockdown, the team have just introduced Sydney to two more venues. There’s Sama Sama in Barangaroo paying homage to Southeast Asian street food and Theo’s Deli, bringing Sydney undoubtedly one of the best-toasted sandwiches around the CBD.
Unlike all his other venues, this is a more relaxed experience set to treat Sydneysiders on the weekdays for casual meet-ups. The inspiration behind the deli was Owner David Bae’s nostalgic memories of wandering down to his local deli and picking up a steak sandwich from his Uncle Theo.
The menu follows a back-to-basics approach. Bae worked with Executive Chef Kevin Jeon, known from Rosetta, Longrain and Ezra, to develop a small but stellar menu featuring seven staple sandwiches. They may sound simple but it’s Jeon’s connections with the local suppliers that make each sandwich special in its own right. He sources incredible ingredients from Two Providores, bread from Luxe Bakery and all the sauces and pickles are made fresh in-house.
It wouldn’t be a toasty shop without a good Ham and Cheese. Jeon’s features smoked ham hock, a fried egg, chips, malt vinegar mayo and a mustard pickle relish. The Tuna Melt is a popular choice with a hint of wasabi and cheesy mayo, as well as the Rueben starring In-N-Out’s famous burger sauce, or something very similar. The sandwiches are either pressed, toasted or cooked on the griddle until cheesy, gooey and golden.
