House Made Hospitality Opens Four Glamorous Venues Inside Sofitel Sydney Wentworth

House Made Hospitality’s four venues are now open—visit tilda and bar tilda for iconic Australian dining, Delta Rue for refined Vietnamese flavours, and Wentworth Bar for drinks on the lush terrace.

Sofitel Sydney Wentworth, a luxury hotel that’s been part of Sydney’s history for nearly six decades, is stepping into a new era of dining following a $60 million renovation. Thanks to House Made Hospitality, known for hits like Easy Tiger, Martinez, and Promenade Bondi Beach, we’re seeing four exciting new venues redefining the hotel’s culinary scene.

The first two to open were tilda and bar tilda. tilda, led by chef Nathanael Merchant (ex-Bentley), brings a fresh take on Australian cuisine, highlighting locally sourced seafood cooked over charcoal. The 110-seat diner offers a perfect balance of elegance and relaxed dining with standout dishes like grilled Murray cod and a decadent surf and turf featuring rib-eye and lobster. Sommelier Paul Sadler (ex-Chophouse) has created a wine list focusing on small-batch, progressive producers. Meanwhile, bar tilda impresses with its live jazz nights, bespoke martini card, and a vast Australian whiskey selection, including over 100 varieties. Cocktails like “Ringo Loves a Blueberry” pay tribute to the hotel’s storied history, blending sophistication with playful charm.

The newly unveiled Delta Rue transports diners to the vibrant streets of Hanoi’s Old Quarter with a French twist. Expect bold cocktails like the Sudecard, featuring cognac, housemade mango cordial, lemon, and red pepper, paired with a Vietnamese-inspired menu. Highlights include Banh Khot and Banh Keo, but the real showstopper is the banh mi trolley, where the classic sandwich is assembled tableside and served in bite-sized portions, alongside a rich pho broth, a unique experience that’s hard to find elsewhere in Sydney.

Rounding out the offerings is Wentworth Bar, the lush terrace bar perched on level five. It’s the perfect hideaway for afternoon drinks or late-night cocktails, boasting a global selection of spirits, including 45 types of agave. With Vietnamese-inspired bites like the Wentworth Smashburger, chicken wings, and oyster mushroom spring rolls (a nod to its neighbour Delta Rue), it’s a go-to for casual but stylish bites. The indoor-outdoor design, paired with its capacity to host up to 250 guests, makes it a must-visit spot for any occasion.
