P&V Merchants is challenging everything you think you know about the ol’ bottle shop.
What if we told you that some of Sydney’s strongest names in hospitality were joining forces to create a bottle shop meets booze community incubator? Well we aren’t fooling you, as Mary’s Lou Dowling and renowned wine and drinks expert Mike Bennie are coming together with Jake Smyth and Kenny Graham (co-founders of Mary’s, The Lansdowne and The Unicorn Hotel), to bring you P&V Wine and Liquor.
Part bottle-o, part booze-community incubator, this exciting new venture is the product of their mutual love for locally sourced and natural wine, small batched beer and support for local businesses.
With a vision to support local winemakers, brewers and distillers, the team at P&V Wine and Liquor will be hosting a mishmash of fun events, including tastings and educational seminars upstairs at the ‘Mike Bennie Centre for Good Wine’. The space will also be open to winemakers to use for their own meetings and events, as a resource or community space.

Mike Bennie said, “As drinkers of natural wine, local beers and small batch spirits, we felt that the inner west was missing a local resource for getting access to all the interesting drinks coming from avant-garde producers, both locally produced and brought in by cutting edge importers with a focus on products that come from organic, biodynamic and sustainable sources.”
At P&V (which means ‘piss and vinegar’), locals get to browse and choose from some of the more unique fermented, distilled and brewed concoctions. Out front, you’ll find a mini ‘market’ set up that caters to all of you DIY cocktails needs, providing everything from fresh citrus to herbs, cucumbers and ice bags.
We’re told that the P&V team are also working with local brewers and distillers to make cocktails, beers and spirits distilled especially for the store. Pre-batched Negronis and Margaritas by the litre will be made available, created by local watering holes such as Earls Juke Joint, Mary’s and Bloodwood.
Cocktails, beers and spirits will also be available to take home in refillable bottles, or you can buy your own 2L Growler with a refund off your next purchase.
We implore you to forget everything you know about those stodgy microwave dinners, as Mary’s kitchen will supply ready-to-cook, microwavable and boil-in-a-bag TV dinners. Select from mouth watering delights such as roast chook with herb butter, lemon brined spatchcock, BBQ packs and black lentil dahl.
