Merivale’s Hemmes reveals details on Bert’s at The Newport.
It would seem that not a week goes by when Justin Hemmes’ name isn’t front and centre. Sure enough he’s done it again, with doors to Bert’s in Newport now open.
Inspired by the grand hotel dining rooms of the 1930s and 40s, Bert’s sits in contrast to the family friendly aura exuded at The Newport. Here, it’s about showcasing the finer things. Think fresh oysters, mud crab and live lobsters from the tank, teamed with a selection of beef and whole fish roasted in a charcoal oven. An impressive kitchen will take centre stage, accented by charcoal ovens and basque grills, opening up to an elegant brasserie and cocktail lounge.
In keeping with the relaxed seaside aura embodying the Northern Beaches, Bert’s will sing lively hues of jade greens and coral pinks.
As you would expect from the Merivale group, Bert’s will front a strong hospitality team. Executive Chef Jordan Toft will run at the helm of the kitchen, with Group Sommelier MS Franck Moreau and Group Bars Manager Sam Egerton also controlling operations.
Cocktails, as developed by Egerton, will take cues from grand European hotels and American country clubs with each drink representing one of the classic styles. Egerton’s pick of the list is inspired by the classic Royale, with Absolut Elyx vodka, ginger cordial and champagne, finished with finger lime caviar.
