Pont Brasserie is the latest addition to the illustrious InterContinental Sydney. Nestled within the iconic heritage-listed establishment, Pont Brasserie invites patrons to indulge in world-class dining within the opulent setting of the InterContinental.

The esteemed InterContinental Sydney, owned by the visionary Mulpha Group, has undergone an extensive transformation in recent years, elevating its stature as a premier destination for luxury and sophistication. Pont Brasserie emerges as a pivotal component of this metamorphosis, contributing to the evolution of Sydney’s sandstone quarter into a dynamic and vibrant dining precinct.

With an entrance on Bridge Street, fittingly referred to as “Rue du Pont” in French, Pont Brasserie is poised to deliver a contemporary twist on classic brasserie-style cuisine. The luxurious space seamlessly marries sleek city design, characterised by deep rich tones, with the timeless elegance of heritage features and dark timber floors.

Leading the kitchen is French-trained Head Chef John Lyons, a Michelin-starred maestro. Drawing inspiration from his tenure at Michelin-starred Rascasse in Leeds, England, and his recent role at Cottage Point Inn in Ku-ring-gai National Park, Lyons brings a menu bursting with robust flavours and creative interpretations, using the finest seasonal Australian produce.

Begin with entrées such as Balmain Bug with roast garlic velouté and bisque, and Wagyu Tartare with mustard fruits and seaweed crackers. The main course menu promises an array of choices, including lamb, duck, chicken, fish, seafood, and various steak cuts. From Celeriac Steak with woodear mushroom and nutmeg to Barramundi with Tasmanian wasabi velouté and finger lime, each dish is a masterpiece.

For dessert, prepare to be delighted by offerings such as the timeless Rum Baba, freshly baked Chocolate Chip Cookie paired with fresh milk ice cream and raspberries, and the innovative Banana Bread with caviar and burnt butter ice cream.

Pont Brasserie stands as the latest testament to the Mulpha Group’s growing hospitality portfolio.
