Mediterranean dining finds a fresh, bold expression in OUZO, the latest venue by the minds behind Sydney’s beloved Tommy’s Mexican restaurants.

Owners David Cooper and Brett Ayton bring their passion for flavourful and rustic cuisine to Darlinghurst, infusing the menu with a modern spin on traditional recipes. Inspired by their trips to the Mediterranean coastline over the last two years, where they experienced the food and the culture, they decided to diversify from Mexican food to Mediterranian cuisine.

OUZO captures the essence of the region with rustic dishes, seasonal ingredients, and a relaxed inside and outside dining setting. OUZO offers a mix of Greek, Turkish, French, Italian, and Spanish influences, taking diners on a journey across the Mediterranean through dishes rich in smoky, chargrilled flavours.

The kitchen is helmed by Chef Ignacio Morales, formerly of Ikaria, whose expertise in Mediterranean cuisine shines through in every dish. OUZO’s two-level space is thoughtfully designed to accommodate any dining mood. The bar downstairs, which operates on a walk-in-only basis, offers small bites and fresh cocktails, a perfect warm-up for the main dining experience in the 100-seat upstairs restaurant.

We had a shared-style feast, with standouts that left a lasting impression. The Eggplant Labneh with pita bread was balanced with a bold kick of harissa oil, while the Slow-Cooked Lamb Shoulder, tender with dill, Greek yogurt and lemon, was a flavourful nod to Greek tradition. Another highlight was the MBS7-8 Tajima Wagyu Sirloin at 300g, perfectly cooked and complemented with a Pedro Ximénez reduction and chives. Side dishes like the Brussel Sprouts with red wine reduction and pecorino are a must-try. The creamy Halva Cheesecake dessert with vanilla yogurt and kumquat marmalade rounded out the experience.

With an extensive drinks menu to match, featuring Mediterranean-inspired cocktails and a curated selection of wines, OUZO is a welcome addition to Darlinghurst’s dining scene.
