As autumn rolls into winter, chefs across Sydney adjust their menu to highlight the best ingredients of the new season. When you think of winter ingredients, it’s hard not to think of truffles. Slightly garlicky in flavour with a musky aroma, this fungi is truly one of a kind and can transform just about any dish into one of decadence and gourmet perfection. Executive Chef Francesco Mannelli from Mode Kitchen & Bar highlights truffles across his entire new menu including dessert, as well as other incredible produce from this seasons harvest.
The revamped menu is sure to satisfy all your truffle cravings this winter. Begin with a snack of Vol au vent featuring Parmigiano Reggiano, creamy custard and fresh black truffle, as well as crispy polenta sticks with house-made truffle mayonnaise. Move onto an entree of wood-roasted camembert with endive black truffle and grilled focaccia, as well as non-truffle favourites like the Bluefin tuna tartare with witlof, chives, stracciatella and wakame. For mains, tuck into hearty potato gnocchi with fresh black truffle, shitake, butter and parmesan, as well as dry-aged duck breast with radicchio, pomegranate and orange jus. For those that thought truffles were only for savoury dishes, think again. Chef Francesco has created the most luxurious truffle delice with beurre bosc pear, caramel financier and truffle ice cream.
The degustation offering has also been updated with the very best of the new menu.
