Opening late 2012, The Keystone Group transformed the top floor of a York Street building into a industrial, gritty-glam, late night restaurant/bar. Already, The Rook is one of Sydney’s hottest new joints. We managed to nab the recipe of a tasty rum cocktail and we’re sharing it with you. Enjoy!
45ml dark rum (the barman slugged some Pampero Seleccion from Venezuela)
15ml apricot brandy
15ml brown sugar syrup
30ml mandarin juice
dash of lime juice
Method: Shake briskly with ice and strain into a tall jam jar filled with ice. Top with home made spicy ginger beer, and garnish with a dried apricot.
