Set to revolutionise the dining scene in Bondi, Makaveli is set to become your go-to destination for all things eating and drinking. The eatery was built as a place where day turns into night, whether you’re craving a morning coffee, afternoon bite or an evening out to catch up with friends.
Behind the creative vision for the restaurant are co-owners Jacob Hill (former Cali Press Area Manager) and Phill Cooke (former Milpa Collective Area Manager). The two first connected in Greece over their love of cooking, both wanting to bring the same passion to the heart of Bondi. Its name, Makaveli, is inspired by the famous Renaissance philosopher and historian Machiavelli, symbolising rebellion and uniqueness in the dining industry.
At Makaveli, most of the fun is around the joy of sharing food. The menu is carefully curated, placing an emphasis on snacks and shareable plates. Head Chef Jessica Young is at the helm of the kitchen, having trained at multiple Michelin Guide recognised venues in Scotland, East London, and Sydney. There’s a commitment of responsibly sourced local produce at the restaurant, with food being guided by what is currently available and at its peak freshness. Make sure to order the highlights, which include fresh Burrata, Kingfish Crudo and Stracciatella di bufala.
Food complements an extensive beverage selection with local coffee beans and creative cocktails taking centre stage. Co-owner Phill Cooke also plays the dual role of Head Bartender, curating a cocktail menu that is reflected through world travels. Take your pick from fresh Elderflower Spritz, Strawberry Negroni and the Charlie Chaplin, alongside local, independent wineries.
