Move Over Macarons- Gourmet Eclairs Have Arrived

First it was macarons then cronuts. Are you ready for pastry’s next big thing? 2014 is all about the gourmet eclairs. Fredric and Laurence Caillon, the husband and wife team behind the much loved and awarded Croquembouche Patisserie have transformed their Bondi Road store into La Maison de L’eclair – your new temple of pastry worship.

The first eclairs you’ll lay your eyes on are buckwheat, gluten-free with savoury gourmet fillings. Savoury eclairs? Just one bite and it totally makes sense. The ‘Saint Manlo’ is filled with fresh prawns, avocado, mayonnaise, mesclun salad, sweet chilli and fresh parsley. Sounds yum right? The ‘Arachon’ reminded me of a blini and was my favourite savoury eclair- smoked salmon with dill, cucumber, lemon zest and a light mix of cream cheese and fresh cream. Amp up your savoury experience with the Bergerac, it’s filled with foie gras, fig jam, fresh figs and Guerande sea salt. La-de-dah.

The “WOW!” Collection and Sweet Classics are what you’re really here for. These are the most beautiful eclairs i’ve ever seen in mine life. Fact. Not only are the eclairs overload with with delicious icing and fruit on the top, there is no scrimping on the filling inside.  Which means you’re probably not going to be able to eat very many of these, despite your watering eyes.

The store is currently selling Christmas themed eclairs in a gift box for $34.50 . You can also customise your eclairs with a printed picture, text or logo. Send your friends, family and clients some of these bad boys and you’ll be in their good books.

The launch of an eclair patisserie would not be complete without an eclair tower.

An alcohol licence is on it’s way as well as a degustation menu so you can soon enjoy these beautiful creations with a bubbly or two.
Online orders are available and you can pick-up your order from La Maison de L’eclair or at Randwick and Banksmeadow Croquembouche Patisseries.
Eclairs range from $5.50-$7.50, with the exception of the Bergerac foie gras eclair which is $9.50.
