Hickson House will bring a warehouse distillery and bar to the heart of The Rocks in 2021.
Sydney, we know you love a distillery bar. In fact, there’s already plenty of top-notch options to visit across the city. There’s Archie Rose’s iconic bar and distillery in Rosebery, Four Pillar’s new gin lab in Surry Hills as well as the relaxed gin bar, Poor Toms, in Marrickville. And now, you’ll find a new option located in the heart of The Rocks opening soon.
Get ready for Hickson House Distilling Co, Sydney’s newest distillery and bar. This giant warehouse space has been transformed into a new gin distillery and watering hole. It’s the perfect spot for the venue, drawing on The Rock’s colonial history to greater a juniper-led venue slinging and distilling top-notch gin.
And this isn’t just any gin bar and distillery. Hickson House is the latest venture for Mikey Enright and Julian Train (the crew from some of Sydney’s favourite barbs, the Barbershop, and the Duke of Clarence). This duo is joined by distiller Tim Stones (ex-Manly Spirits) who will be leading the charge to craft incredible spirits in this historic warehouse space.
But it won’t just be gin on the menu at Hickson House. Expect everything from aperitifs to whiskey and specialty spirits to be pouring at this multi-story bar. There’s even a botanical-inspired food menu showcasing local, native ingredients to match.
Even the gin distilled on-site will be infused with native ingredients, sourced locally and from across NSW.
Want the full distillery experience? Hickson House will be opening their doors to immersive tours behind-the-scenes of its distillery and spirits store. You’ll even be able to book in for an on-site tasting, or you can simply swing by for a top-notch cocktail experience (with private dining rooms also due to be available).
Hickson House is expected to open in June 2021 at 68-84 George Street, The Rocks.
