In this exclusive SESIÓN Tequila masterclass, attendees will learn how to make three delicious cocktails as well as how to maximize the use of ingredients through sustainable and upcycling practices, including using Pineapple skin and core, which are often thrown away or compost, to make tepache de piña, a Mexican fermented drink; and using lime skin to make Oleo Saccharum, an oily sugar that can be used in cocktails. Beginning this week, every Thursday and Friday, from 12pm to 2pm, customers who live or work nearby can pop by the Sydney CBD restaurant, at 66 Hunter Street, and pick up their favourite burgers. Rockpool’s two most acclaimed burgers are available for $25 each, each served with a side of delicious fat cut chips.
