Grant Collins and Gin Lane Sydney have unveiled their latest venture: Dry Martini.
This brand-new Kensington Street bar is dedicated to celebrating the evolution of the classic dry martini, with a dash of Spanish flair and a selection of elevated bar snacks.
Drawing inspiration from London’s cosmopolitan martini scene, and the laid-back ambience of Spanish tapas bars, Dry Martini is an ode to European dining. Guests can choose from vintage and contemporary martinis, where original recipes, straight from the roaring 20s and 30s are being stirred up.
If you’re looking for something a little more refined, there’s a range of cocktails to sip on while you visit. Try the salted caramel espresso with nitro-frozen foam, or the Scottish espresso with shortbread-infused whiskey and shortbread foam. Or, if you can’t decide, they have an espresso martini tree – offering all six of their espresso concoctions in an amusing tower, perfect for sharing (or not!).
Beyond martinis, Dry Martini offers a delectable selection of share plates reminiscent of San Sebastian’s pintxos. The truffle and jamon toasties are generously finished with caviar and make a great match for a signature negroni. The jamon croquettes with green olive or the anchovies with grilled zucchini are a burst of flavour in the mouth.
Try the crowd-pleasing “Oyster Shell Gin Martini” served alongside freshly shucked oysters with a plume of smoky dry ice. Dry Martini prides itself on tableside service from impeccably dressed bar staff in waistcoats. Witness the creation of your perfect martini, without having to leave your chair.
Dry Martini understands the importance of affordable dining and offers $10 mini martinis and $15 daily cocktail specials during Happy Hour from 5.30-7pm Tuesday to Thursday, and 5.30-6.30pm Friday and Saturday.
Dry Martini welcomes guests Tuesdays through Saturdays, from 5-11pm on the buzzy Kensington Street. Visit their website here, or Instagram here for more information and prepare to be shaken (not stirred) by their innovative take on the classic martini.
