One of Sydney’s most storied dining addresses is entering a new chapter.
In February, the historic Darling Mills site on Glebe Point Road will welcome a new chapter with Darling Glebe, a luxe subterranean brasserie. The venue will feature a martini-focused bar alongside an intimate French omakase chef’s table. Notably, the opening marks a return to the site for acclaimed chef and restaurateur Jeff Schroeter, who previously co-founded Beckett’s at the address.
At the same time, Schroeter’s vision blends heritage with a modern edge. Original convict-chipped sandstone, vaulted ceilings and Coachwood tables remain centre stage. Meanwhile, the space unfolds across five distinct zones, from a late-night martini bar to a casual-luxe dining room, a private chef’s table and a rare underground wine cellar for events.
Finally, the menu looks back as much as it looks forward. Produce will be sourced from the founding Adey family’s Darling Mills Farm, with select dishes reimagined from the site’s original cookbook.
