One of Sydney’s most storied dining addresses is entering a new chapter.
Darling Glebe has officially opened inside the historic Darling Mills site on Glebe Point Road. Notably, it marks a return to the address for chef and restaurateur Jeff Schroeter.
Set beneath street level, the new 100-seat brasserie and martini lounge blends heritage details with a modern French-led dining concept. Convict-chipped sandstone, vaulted ceilings and original coachwood tables remain. At the same time, the space feels contemporary and refined. It unfolds across five distinct rooms, including the Ferrari Martini Lounge, a main dining room, a private chef’s table and an underground wine cellar.
On the menu, Schroeter draws on four decades in international kitchens as well as the site’s long history. Produce is sourced from the Adey family’s Darling Mills Farm, while select dishes have been revived from a 130-year-old cookbook. Standouts include oyster Rockefeller, escargot en cocotte, duck à l’orange and strawberry foie gras.
Meanwhile, a French omakase-style chef’s table runs on Wednesdays and Thursdays. Seating just four guests, the experience is shaped by seasonal produce and designed to feel intimate and immersive. Alongside this, the wine program spans classic and cellar-worthy labels, supported by a purpose-built underground wine cave.
Darling Glebe is now open for dinner Wednesday to Sunday from 5pm, with lunch served on Fridays from noon.
