Get ready Rozelle! The neighbourhood is about to get a whole lot more delicious, first with the arrival of Love Tilly Group’s Fabbrica Bakery, and then with something more refined. Introducing Chez Blue, a charming French bistro set to open its doors on Darling Street this October.

Leading the kitchen brigade is none other than Mark Williamson, former head chef of Bistro Moncur. With Williamson’s culinary prowess and passion for French cuisine, we are confident that this new venture by Solotel will easily match the caliber of Sydney city’s French dining gems like ArmoricaThe Grand Charles Brasserie.

Having spent the past six years at Bistro Moncur and now finding himself in close proximity to the former Bistro Deux – a venue owned by the same restauranteur as Bistro Moncur – Williamson is fueled by a strong determination to excel. His goal is to bring the inner west locals the same French culinary finesse as the above Sydney city venues.

At Chez Blue, you can anticipate a consistent and accessible bistro offering. This will be a place locals can gather multiple times a week, indulging in timeless French classics with daily specials, designed to unveil imaginative creations and showcase the finest seasonal produce. Expect a warm ambiance, evoking the charming essence of dining along the streets of Paris.

Elliot Solomon, the CEO of Solotel, holds Chez Blue particularly close to his heart. He likens the venture to the birth of a child, with the name Chez Blue carrying special significance as “Blue” is his son’s middle name. The opening marks a significant milestone for Solotel, as it stands as their first independent restaurant venture.
