Salt Meats Cheese open new vibrant rooftop bar in Circular Quay

Bar Ombre is the new rooftop bar giving you the ultimate Sydney Harbour vantage point.

While Italian restaurant lords Salt Meats Cheese might be best known for their delicious pizza and pasta making abilities, owners and childhood friends, Edoardo Perlo and Stefano de Blasi, aren’t quite done leaving their mark on Sydney’s food and beverage scene. Brace yourselves, as the CBD has now another new rooftop bar to add to its impressive collection. Resting atop the Gateway complex in Circular Quay, Bar Ombre is the new casual drinking spot for those looking for a post-work tipple with a money-cant-buy view.

As for the bar’s name, it takes its inspiration from the striking gradients that soak the rooftop’s Sydney skies. A vibrant menu along with pops of greenery and colourful furniture play further into the theme, giving the new bar some striking aesthetic vibes.

On the drinks front, it’s all about fresh, simple and well-executed beverages. Teetering between the classics and the more bespoke, you’ll spot a pear and maple old fashioned, a vanilla and grapefruit barrel-aged Negroni, plus the ‘Smokin’ Nights with Averna Amaro, mezcal, Angostura bitters, vanilla syrup, cream and cinnamon, along with others.

For the wine drinkers, you’ll find plenty of Italian drops on the menu alongside an impressive array of biodynamic, organic and vegan wines.

For lovers of a CBD happy hour, head in from 4-6pm daily to get your hands on $5 beers and wines, $10 spritzes and $20 cocktail carafes including Aperol Spritz, Sangria, Margarita and homemade sodas of the day with your choice of spirit.

To team with your drinks, you can expect the signature SMC food stamp with various antipasto plates, including daily stretched cheese, cured meats, wood baked focaccia plus more.

Larger plates include fried calamari with crumbed zucchini, pickled chilli and aioli; San Daniele prosciutto and burrata with grilled eggplant, basil and rocket pesto and marinated white anchovies with fresh tomato, herbs and breadcrumbs.

Following on from happy hour, Bar Ombré will also be serving up free bar snacks from 6pm-8pm. Appetite whetting plates include truffled popcorn, wood-fired crackers with pesto, smoked olives, cured pancetta with chilli and pepper, truffle pecorino plus roasted peppers with salsa verde.
