Hospitality heavyweights have combined forces to launch a pop-up bar on Blight Street.

There’s a new bar opening in Sydney just in time for lockdown restrictions to lift and we couldn’t be more excited. Perched up in a building that’s set to be knocked down to make way for the new Sydney Metro, About Time is here for a good time, not a long time.

The possy of owners have known each other for years and have combined their hospitality skills and life experiences to bring all the things they love into one bar. This includes ’90s nostalgia and alfresco drinking till the early hours. As the name suggests, it’s been in the works for a while. It’s a collaboration between big names and big venues, Ben Hickey and Naomi Palmer (owners of The Roosevelt), Steve Davis (venue manager at Opera Bar), Tom Price (The Baxter Inn), Jono Carr (ex-group bar manager at Liquid and Larder), Paul Oscar (ambassador of Stone & Wood) and Shannon Ponsford (head of wine at a big wine importer).

To drink, there will be boozy spins on the classic 7-11 slushie including a Frozen Irish Coffee and Frosty Fruit. Carr who is behind the bar at The Gidley and The Wild Rover is shaking cocktails such as the Pavlova Milk Punch and Rocky Road Old Fashioned. You can also expect spritzes on tap and an ever-evolving wine list including Australian and European drops. Price and Hickey will be in charge of the spirit collection and Oscar is on tapped beer and craft tinnies.

Chef Benji Llewellyn from The Roosevelt has ’90s dinner party classics on the food menu. Pork, lamb and veggies roasted over a coal fire will be served on sandwiches. Dessert will consist of ’90s style Viennetta and Pavlova.

About Time is set to open this October on the corner of Hunter and Bligh streets and will stand until the scheduled demolition in late 2022.
