Like a modern Australian phoenix, from the ashes of a global pandemic…Silvester’s makes its return to Bulletin Place with all new dishes and an immersive 7 course degustation.
The Sydney hospitality scene is slowly approaching the end destination on the road to recovery and boy, are we happy to see it. New venue openings are on the rise and bring with them a restored sense of excitement for Sydney dining. Furthermore, we’re now seeing iconic Sydney institutions like Silvester’s make a return to the scene, breathing new life into classic dishes and greeting us with the gusto of a long lost relly.
Tentatively edging back into service, Silvester’s will recommence initially with Friday and Saturday evenings from 6pm onward. A la carte dining will be available from the get-go, and for those wanting to make up for the time deprived of their favourite Silvester’s flavours, a 4-course and 7-course degustation will be available with optional paired premium wines.
Michelin Star-trained chef Raphael Szurek showcases Silvester’s classic dishes as well as decadent new favourites.
The menu will be a melange of contemporary Australian cuisine with global influences featuring Chef Raphael Szurek’s most popular classic dishes as well as exquisite new additions. Conveniently subdivided into Start, Continue, Indulge and Finish, dishes include an autumnal Warm Potato Cream served with cured egg yolk, chives and sourdough to mop it all up. After, indulge in a Tajima Wagyu Striploin MB6+ with eggplant and bone marrow jus.
If you’re a true foodie and the prospect of a la carte dining presents a severe case of choice anxiety, the exquisite Chef’s Table menu is the one for you. The 7-course degustation is an immersive experience led by the award-winning international chef Raphael Szurek. You’ll enjoy a front-row seat within the kitchen itself – at the heart of the action – with guided talks from Raphael across each course and pairing. Find out more here.

Silvester’s is all set for a busy return to service after a two-year hiatus so be sure to secure a booking to avoid disappointment! If you’re looking for a more casual pre or post-dinner tipple, head to Sylvester’s lounge. Located adjacent to the restaurant, Silvester’s Lounge will also be open from 5:30pm onward for pre-dinner aperitifs, canapes, cocktails, and wines.
