Step into a World of Sophisticated Drinking and Dining at the New Saint Hotel in St Kilda

St Kilda’s iconic Saint building at 54 Fitzroy Street is getting a new lease of life this autumn with the launch of Saint Hotel. The venue promises to be a hub of activity, featuring five distinct dining and drinking concepts under one roof.

 

The Saint building has a rich history, having previously housed a bank, a pub, and most recently, a nightclub. Now, a team of passionate hospitality professionals, led by General Manager Mrinal Beekarry, has come together to breathe new life into the space.

The Field Group, led by James D Field and his father James M Field, oversaw a complete interior renovation of the building in collaboration with Melbourne architects Telha Clarke. The result is a stunning transformation that features five distinct venues: Saint Dining, Saint Bar, The Vault, Bar 54, and Stellas. The venue also offers private and semi-private dining rooms.

Saint Dining is the centrepiece of the dining experiences at Saint Hotel, with Executive Chef Gary Lai at the helm. The menu celebrates modern Australian cuisine, with a protein-focused, produce-driven approach that centres around a Josper charcoal grill. Guests can choose from a selection of premium cuts of beef or seafood, with sauces and sides to pair. The interior features a moody materials palette of scorched timber, Nero Portoro marble, and bronze, with buttery leather banquette seats bathed in light under the iconic Saint Hotel atrium.

Adjacent to Saint Dining is Saint Bar, a smart-casual bar and dining room that serves as the first touchpoint for guests entering Saint Hotel. The venue boasts high banquette seating, a spectacular high ceiling that showcases the building’s heritage bones, and French windows that flood the space with light. The menu features an extensive drinks selection, including a range of signature cocktails, beers, and non-alcoholic options, alongside a strong 200+ wine list. Guests can indulge in a namesake ‘Saint Burger’ or prawn katsu sando while enjoying the lively atmosphere.

The Vault, opening later this year, will be a street-facing bottle shop and intimate tasting venue that delivers sophistication in spades. Guests can choose from an extensive selection of wines to take home, or sit and order snacks from Saint Bar.

Upstairs, Bar 54 pays homage to Saint Hotel’s address at 54 Fitzroy Street and the sophistication of New York’s infamous Studio 54. The venue features a light-filled atrium, warm veneer timber, mustard velvets, leather booth seating, and Red Onyx marble tables. The sun-filled terrace offers a glamorous view of palm trees, while the menu offers a generous selection of produce-driven bar snacks alongside a curated drinks and cocktail list.

Adjacent to Bar 54 is Stellas, a cocktail bar and listening lounge set to open mid-April. Roy Das Neves will be bringing his unique vision to a specialty cocktail menu with a seasonal focus and an inventive spin on ingredients. The venue will also feature a custom-designed sound system by Pitt & Giblin, supporting a line-up of DJs on Thursday and Friday evenings.

Saint Hotel is poised to become a beloved destination in the heart of St Kilda and Melbourne, offering highly curated spaces and quality hospitality experiences to all guests. Saint Bar and Saint Dining are open 7 days a week, from 12pm to late.
