New Opening: Meet Vini Divini Wine Lab, The CBD’s New Mediterranean Wine Bar

Bars, Drink, Sydney / 27 November 2020

Celebrate the start of summer at the new Mediterranean wine bar, Vini Divini Wine Lab.

Looking for the perfect spot to toast to summer? Nestled in the heart of the CBD, a new small bar has recently opened its doors (bringing a taste of Mediterranean dining culture to Sydney).

Say hello to Vini Divini Wine Lab, the new CBD wine designed for good food, delicious wine, and great company. This new spot hopes to bring Sydneysiders together with a place to transport yourself to the sweet life – ‘la dolce vita’. Since swinging open its doors earlier this month, the wine bar has proved itself a major attraction at the revitalised Wynyard Park Precinct by Brookfield Properties.

Every decision at Vini Divini Wine Lab has been carefully considered to offer opportunities for connection and conversation. Owner Philippe Gilbert along with Romina Dargenton of hylé Architecteshave worked to create a large central bar, reminiscent of a kitchen bench. The goal is to bring people together to laugh, pour wine, break bread, and share stories or ideas.

The menu itself transports guests to the heart of the Mediterranean, with influences from Italy, Greece, Israel, Lebanon, Morocco and beyond. The wine menu, curated by Sommelier Raphael Mulligan (formerly of Rockpool Dining Group), includes wines from recognisable terroirs such as Italy and France, and lesser-known wine-making regions including Greece, Turkey, Georgia, and Armenia (arguably the birthplace of wine).

As for eats, expect simple, fresh mezze plates, including Stracciatella with Asparagus, Yellow Squash, Peas, and Mint; ‘Uovo Tonnato’ (soft-boiled egg with tuna mayonnaise and Angelachu Anchovies); Kingfish Crudo; Pickled Herring with Celery and Radish; and Beetroot-Marinated Artichokes with Toasted Almonds. Plus, there’s plenty of Salumi and Formaggi to round out this Mediterranean-inspired menu.

Grab a seat outdoors, soak in the last rays of evening sunshine, and enjoy a tipple and snack at Vini Divini this summer. Find Vini Divini at 60 Carrington Street, open Mondy to Friday from 12pm till late.
