Savour a variety of carefully-crafted dishes that showcase bold flavour profiles and fresh produce, designed by award-winning Head Chef Francesco Mannelli.
Expect Mode Kitchen & Bar to serve up dishes such as Hervey Bay scallops with tartare, finger lime, and Siberian caviar and Orecchiette with zucchini flowers, oregano, and Balmain Bugs. You’ll also have your choice of mains, with Dry aged Maremma duck breast with cararmelised fig, Treviso, muntries, and orange sauce or Line caught coral trout, vine leaves, Lebanese cucumber, Ajo Blanco, and white grape on the menu.
End the night on a sweet note by sharing a Truffle Saint Honore with your loved one, created by French pastry duo Elliott and Quentin.
