Merivale’s Mediterranean-Style Poolside Restaurant Uccello Is Reopening This Month

The Amalfi Coast is coming to the heart of the CBD.

For over a decade, Uccello has been a destination for good times and great hospitality in the CBD. Located on Level 4 of the Ivy precinct, the Merivale venue is set to reopen to Sydneysiders in late October with a new menu and team of leading hospitality talent.

The iconic poolside restaurant will be bringing a slice of a Mediterranean-style summer by the pool to Sydney. The new menu at Uccello takes inspiration from the Italian coastline, with a focus on local Australian produce. The restaurant’s wood-fired oven and charcoal barbeque are used across the menu, with flavours and techniques that are humble, restrained and regional.

At the helm of the new-look kitchen is one of Australia’s brightest young chefs, Nigel Ward (ex-Sagra). Expect to enjoy the likes of Burraduc Valley buffalo mozzarella, with violetta artichokes and cantabrian anchovies; Cape Morton scarlet prawns with native finger lime, spaghetti alla chitarra, vongole, chilli and bottarga, Ulladulla ruby snapper in cartoccio, served with mussels, fennel, salsa verde; and Melanda Park suckling pig, with wine grapes and vino cotto.

As for drinks, expect Uccello to be pouring much-loved classics with an Italian twist. Expect an Italian-leaning wine list as well as drops from exciting local producers and iconic Australian wineries.

Alongside Ward will be a new team including managers Carmen Tomasic (ex Hemmesphere, sushi e) and Mathieu Mozziconacci (ex Felix), and sommelier Fabio Pallottini (ex. Mr Wong and Automata).

Plus, the ivy PoolClub has also undergone a refresh. Expect additional seating options that offer a relaxed alfresco dining experience, with light Italian snacks and wood-fired pizza on the menu. And you can even enjoy Uccello’s caviar service poolside for the ultimate summer sundowner.
