You’ll start off the evening cruising Sydney Harbour, taking in the kaleidoscope of Vivid lights, while enjoying a selection of delectable canapés. Cheese and onion or beetroot and tuna tarts, smoked oysters with blue pearls, and a delicious chicken and macadamia toastie are just a few tempting options to whet your appetite as you glide under the illuminated Harbour Bridge. As the night deepens, the real magic begins. Be among the very first to witness the breathtaking Vivid Sydney Drone Show. Hundreds of synchronised drones will come alive, painting dazzling aerial formations against the night sky. This mesmerising performance is a true marvel of creativity and technology, and you’ll have a front-row seat to experience it all.
As you settle in for the main event, Chef Robinson’s artistry takes centre stage. The evening commences with a delicate poached salmon entrée, infused with lemon myrtle, followed by a mouthwatering lamb shoulder served with fresh asparagus and herb risotto.
As the night progresses, soak in the breathtaking spectacle of Sydney’s transformed skyline. Chef Robinson will then unveil his culinary finale – a delightful edible banana creation, sure to be a conversation starter and a fittingly colourful conclusion to the meal.
