Merivale's The Collaroy Gets Ready to Open This Month

After much anticipation, The Collaroy’s doors get set to open in May.

Northern beaches locals have patiently awaited the re-opening date of the beloved Collaroy Hotel, and now we at last have confirmation that doors will be opening this month. Under esteemed Merivale management, The Collaroy is predicted to be the next go-to vibrant beachside destination for beaches locales and beyond.
As for what to expect, The Collaroy offers a laid-back and relaxed hangout. This fuss-free attitude translates directly onto the plate, taking much of its inspiration from the venue’s striking location. According to Executive Chef Jordan Toft, the food is “simple, yet elegant food for a community that loves the sun, surf and sand”.
On the ground floor of The Collaroy you’ll find an evolving offering throughout the day. Head on over to the kiosk for breakfast to find all the usual suspects, such as coffee, juice and house made pastries, alongside pizza bases with fresh breakfast toppings. On the lunch menu are health-driven bowls and plates with an assortment of rustic combinations. Think muesli with dried fruit, nuts, oats, coconut yoghurt and cold milk and toasted faro with avocado, boiled egg, rocket, grilled haloumi, olive oil and lemon.

As day turns into evening, the ground floor will offer snacks to accompany your favourite tipple in hand, like freshly sliced prosciutto and grissini, ham croquettes with spicy aioli and anchovy toasts with pickled shallot. Making for the perfect family go-to, the dinner menu celebrates generous home-style cooking. Think lamb and eggplant moussaka on Monday, pork and fennel sausages with roasted pumpkin and green garlic on Tuesday, or a coastal take on the Sunday roast.

Travel upstairs to discover a open kitchen and not one but two bars to choose from.  In keeping with the surrounding seascape, patrons will find everything from freshly shucked oysters, to local seafood, meats from the charcoal grill, authentic pizzas and vibrant salads on the menu.

Diving into the all-important wine list, it would seem they’re keeping things simple with a focus on fresh, crisp white and rosé. No complains here!
