Garry McGrath, the seasoned proprietor behind The Sussex Hotel at Barangaroo, has transformed the former Gilroy’s Hotel into a two-level haven, preserving its classic pub ambience downstairs while unveiling a stunning Terrace Bar & Bistro upstairs.
