Sweet, sour, salt, spice and all things nice. Rumble is centred around celebrating the four flavours that permeate the region’s culinary identity. 

Celebrating the traditions, tastes and colours of Southeast Asia with a contemporary flair, the all-new eatery is set to launch at The Star Sydney this May, with promises to surprise and delight the senses.

Head Chef Benjamin Tan has drawn on his Malaysian heritage, taking inspiration from dishes enjoyed street-side during his childhood. The result is a simple yet punchy menu that heroes bold flavours and exceptional local produce.

If you’ve ever traveled the culinary trails of Malaysia, Indonesia and Singapore, you’ll instantly recognise the authentic flavours signature of this part of the world. Pangs of nostalgia are met with surprise as each dish take on an unexpected, progressive twist. Think a deconstructed prawn laksa, black Angus short ribs infused with the spices of beef rendang, and dried-red curry smoked duck. 

To match the bite-sized delights and family-style banquets, Bar Manager Jacky Huang has developed an inventive cocktail list that perfectly complements Rumble’s four flavour pillars. The old-meets-new drinks offering will incorporate a range of spirits craftily infused with spices, herbs, teas and flowers from across the Asian continent. 

In keeping with the complementary polarities of the food menu, a similar traditional yet modern approach has been taken to the Rumble interiors. Natural textures are paired with modern furnishings to create a space that’s worldly yet elegant. Recycled mahjong tiles adorn the bar, rattan screens divide the main dining area from the semi-private dining room, and a vibrant hand-painted animal mural spreads across the walls. The result is an atmosphere that feels welcoming yet vibrant, elevated yet playful.
