Roxy’s Restaurant & Bar Opening In Double Bay Soon

Damien Monley has returned to Sydney with an all-new bar and dining experience in Pallas House.

Hospitality heavyweight Damien Monley is pushing the boundaries of dining and hospitality with his brand new restaurant and bar, set to open in Double Bay. Monley has a wealth of experience under his belt from being a Head Chef at Flat White Cafe Woollahra, founding a business venture Think Tank Hospitality, opening Bowral’s award-winning modern Australian restaurant Grand Bistro, and moving to London as Executive Chef & Co-Owner of the acclaimed LIV Restaurant in Belgravia. His reputation is built off creating unique dining experiences around the globe and we can expect no different from Roxy’s.

Roxy’s will be located in the heart of Double Bay, inside the Fortis Group’s landmark known as Pallas House. The all-day and late-night venue was named after Monley’s fun-spirited daughter and is set to bring lighthearted and welcoming energy to Double Bay’s new dining precinct. The restaurant is in good company alongside Neil Perry’s Margaret and we’re expecting some big names to walk through the doors.

From breakfast through to late evening, the vibrant space and casual bar area will offer delicious food choices coupled with a compelling drinks menu. Monley cooks how he likes to eat at home drawing on Middle Eastern flavours and local ingredients. You will see delicious twists on more classical dishes – think punchy spices, house-made pickles, lots of herbs and personality. The menu is best described as fresh, healthy and vibrant.

Because Aperitivo Hour is a rite of passage in Sydney, Monley has created a Spritz Session which will offer seasonal spritzers between 3pm and 6pm. Utilising preserved fruit and house-infused spirits, these sessions will become your new go-to.

“I was intrigued by the brief for the wider Pallas House development and really excited to bring my new concept to Double Bay. I love being able to create an intimate restaurant and bar offering, that has a sense of familiarity and comfort. As well as being visually beautiful and welcoming, it’s a place where you feel equally at home at seven in the morning as you would at midnight. We balance comfort and clean with boozy and behaved!”, says Damien.

The Roxy’s team welcomes Head Chef Denzer Aseoche from Kepos Street Kitchen, gun barista Chris Cowan from Flat White, as well as a skilled Mixologist who is yet to be revealed.
