Pyrmont’s New Wine Bar Percy Brings A Taste Of Spain to Sydney

Sydney’s dining scene welcomes Percy, a Spanish wine bar inspired by the pintxos and tapas traditions of San Sebastián and Barcelona.

Located in the historic Hotel Woolstore 1888 in Pyrmont, Percy offers a laid-back yet refined space for food and wine lovers to enjoy Basque-inspired dishes and Spanish hospitality.

Percy’s menu, created by Executive Chef Eli Lozada and Chef Rosy Scatigna, highlights authentic Spanish flavours with modern touches. Guests can enjoy small plates like Percy’s Gilda ($7), artichoke fritters with romesco ($16), and fried squid bocadillo with saffron aioli ($15). For larger dishes, options like spatchcock picante and flank steak with mojo verde showcase hearty, shareable fare.

The laid-back drinks menu embodies true Spanish style, featuring a curated selection of organic wines, sherry, and creative cocktails like the Riojan Sunrise ($22) and the Margarita Picante ($26). Percy also leans into the conservas trend, featuring premium preserved seafood imported from Spain, such as sardines, anchovies, and salmon.

“Every dish has been designed to give that authentic Spanish air. It’s all about fresh, traditional flavours that have been chosen to go perfectly with Percy’s list of Spanish wines,” says Eli.

The 50-seat venue combines high bar seating, communal tables, and an atrium dining area, creating an ideal setting for everything from casual drinks to intimate meals. A private dining room accommodates up to 14 guests for special events.

Percy’s happy hour, running Tuesday to Friday from 3–6pm, offers deals on tapas and wines and is primed to become a local favourite for that after-work tipple. With its focus on fresh ingredients, thoughtful design, and warm service, Percy is set to become a favourite for Sydney locals and visitors alike.

Percy is open Tuesday to Saturday from 2pm to 10pm.
