Sydney’s iconic Republic Hotel gets a makeover!
Sydney’s CBD is no stranger to lively bars and bustling pubs. But for those seeking a more refined after-work wind-down or a stylish rendezvous with friends, a new venue has emerged on the scene. Inna Lounge, nestled on the second floor of the historic Republic Hotel, offers a sophisticated and intimate space to enjoy expertly crafted cocktails and enticing bar snacks.
Stepping off the bustling streets of the CBD into Inna Lounge feels like a welcome transition. The atmosphere is warm and inviting, with plush leather booths and soft lighting creating a sense of quiet luxury. Marble tabletops and brass accents add a touch of elegance, while the exposed brick walls nod to the building’s rich history.
Inna Lounge’s beverage menu is where the real magic happens. Here, classic cocktails are reimagined with a touch of playful nostalgia. The “Mayne Meal,” for instance, cleverly blends everyone’s favourite childhood chocolate drink, Milo, with the smooth sophistication of an espresso martini. For a taste of something fruity and refreshing, try the “Biscuit Tin,” a take on a peach cobbler complete with a delightful Arnott’s Scotch Finger garnish. The cocktail list extends beyond these whimsical creations, offering a well-curated selection of over 400 spirits and 200 wines to satisfy any palate.
Complementing the innovative cocktails is a menu of delectable bar snacks designed by chef Derek Bell. Expect an array of high-quality ingredients, from sustainable caviar served with potato crisps and crème fraiche to succulent Moreton Bay bug rolls with a touch of horseradish. Whether you’re looking for a light bite to accompany your drink or a more substantial post-work treat, Inna Lounge caters to all appetites.
The Republic Hotel itself is a Sydney landmark, having served thirsty patrons since 1865. Inna Lounge represents the first stage of a multi-million dollar renovation for the iconic venue. The focus here, however, is on creating a distinct experience. While the Republic Bar downstairs maintains its traditional pub feel, and plans are underway for a new dining concept on the first floor, Inna Lounge offers a more intimate and elevated atmosphere.
