Bondi welcomes The Hill Bar + Eatery
As Bondi heats up, so too do the bars. We all love our sundowners on the grassy knoll in Bondi… well think of The Hill Bar as an extension of the grassy knoll. It’s a place where you can spend that last minute of your weekend freedom clutching at the rays on a balmy Summer Sunday. This Florida Keys inspired bar with an indoor garden and flamingo wallpaper makes you feel like you are en route to some other tropical paradise.
Owners Charmaine O’Leary and Michael Benson have fashioned the perfect menu full of unique twists with rum based cocktails a mainstay. Try The Cargo Chai – iced chai tea laced with rum, one of the locally crafted beers or a biodynamic Krinklewood Semillon either of which will quench your Summer thirst. Sitting by the bar you get hit with aromas of lime, orange, mint and a host of other fresh ingredients that are moments away from morphing into some fabulous cocktail in your hand.
We like a venue that has more than one thing to offer. The perfect afternoon would be to go for a refreshing swim at North Bondi, stroll up to The Hill Bar to watch the sunset from the outdoor tables, listen to some live music and have a drink or two. Add some freshly shucked oysters doused in caramelised red wine vinegar & ecshallot dressing or a black eyed bean fritter with mango and ginger chutney and you think you have it made! Hours seem to pass on these balmy summer nights. By this time you probably don’t want to move. You’ve rallied a bunch of friends to join you for dinner and all you have to do is glide past the bar into The Hill Eatery to grab a table.
The Hill Eatery still has casual share style dining available and is very much focused on bringing together the local community. They serve healthy, organic and ethically sourced food and drinks. Highlights on the menu are most definitely the spiced lamb rump with plantain, red pepper and papaya jam, pickled green papaya.
We suggest you also try their famous red rice salad with dried figs, almonds, cranberry, cabbage, apple, mint & lemon. You also can’t go past the pulled beef brisket with slaw, crispy eschallot and chipotle mayo or the seared Hervey Bay scallops with grilled pineapple salsa, cucumber, jicama. The only problem with those is having to share them…
With the growing cabana-bar culture of Sydney The Hill Bar seem to have created the perfect vibe. It probably has a lot to do with the location too. It’s just far enough to be out of the way of the hustle of Bondi but close enough to watch the waves while sipping on a Sublime Sailor – even if you did only order it because of the name!
