Tucked into the sandstone depths of The Rocks is The Doss House, a new whisky bar.
One of our city’s oldest suburbs, The Rocks, has just been gifted a brand new small bar with a special affliction for whisky. The Doss House comes oozing in history, former tenants including a bootmaker, boarding house and opium dealer. Interested? Here it’s all about whisky, with over 150 global varieties to choose from.
Bringing a plethora of skill to The Doss House are co-owners come school friends Colm O’Neill and Eoin Daniels. Whilst O’Neill has worked in the likes of The Rover, Peru, Daniel’s other business, Top Knot Carpentry and Joinery, has been responsible for fit-outs at The Opera Bar, Royal Randwick Racecourse, The Clock Hotel, The Old Clare Hotel and The Golden Sheaf.
On the cocktail list are also a range of Doss House signatures. Sample delights such as The Dusky Scotchman, made using Laphroaig 10yo, Branca Menta, honey and saline. Following on from the summer spritz and fizz trend, you’ll also find a Blackberry and Lemon Myrtle Fizz, shaken and stirred using blackberry-infused Stolichnaya, lemon myrtle, fresh lemon and Cynar.
As for the fit out, you can expect dark, sexy tones evoked through the use of rich American oak, brass fittings, custom leather seating, luxe fabrics and soft lighting. As for the sandstone walls, which have remained untouched for 170 years, one can only begin to imagine if they could speak.
