Daintree Sydney is a small bar with a big purpose, shaking up a sustainably sourced signature cocktail menu and pledging to donate half of all profits toward reforestation.

Daintree Sydney is the newest must-try micro-bar to plant itself in The Rocks, where you can have a drink AND contribute to reforestation at the same time.
With a mission to plant one million trees in Australian rainforests and a cocktail menu centred around the abundance and sustainability of Australian local produce, Daintree Sydney is tracking and minimising its footprint every step of the way. A rotation of seasonal native ingredients is at the heart of each cocktail, many of which are harvested from the Daintree Sydney herb garden. The only international brands you will see on the predominantly locally sourced menu, are those that have truly charitable & sustainable initiatives in mind.
The food has a simple sustainable focus. Cured fish, bowls, mussels and local cheeses will be available, plus a larger kitchen menu is on offer from The Keel upstairs.
When it comes to understanding the native flora that used to grow on the land around them, and its traditional owners, the team are eager to learn from the local community. The whole Daintree Sydney team have committed to regular tours guided by local Aboriginal groups to continue learning about the region as it was originally inhabited.
The micro-bar unfurls onto the Cadman’s Cottage Reserve parklands on George St, backdropped to an array of leafy Australian greenery. Beyond the Fern and Gardenia-adorned hidden entrance along the Cadman’s stairs, the fit-out is a mixture of heritage, recycled timbers and Modern Australian art seating just five tables at a time.
Daintree Sydney opens in collaboration with HalfCut, an NFP with the mission to protect rainforests and rewild over 50% of rainforests that have disappeared. The bar is aiming to raise $50,000 for HalfCut within its first week! Contribute a donation via the QR code on each table linking you directly to donations and a merch store that supports the bar’s reforestation goals.
