This Micro Cocktail Bar Is Serving Cocktails Inspired by Fire, Grass and Old-World Superstitions

Drink / 21 May 2025

Cantina OK!, the micro mezcal bar known for its punchy margaritas and cult-like following, has launched a new cocktail series titled Ritual.

The menu explores the grounding moments that shape culture and connection—whether it’s the burning of aromatic woods, the cooking of native ingredients, or the modern urge to simply touch grass.

“Cantina OK! has always been built on ritual,” says Jeremy Blackmore, co-founder of MUCHO, the group behind the bar. “From the palo santo we burn before each shift to hand-squeezing every lime, it’s all about those small, intentional actions that bring people into the present.”

The new drinks are rooted in sensory and emotional storytelling. Here’s what’s pouring:

Nevada OK!
Tequila, Vetiver Gris, Lemongrass, Pandan, Grass Jelly (Cincau)
This is a rework of a Cantina OK! favourite, inspired by the simple act of logging off and going outside. Grass jelly, made from mesoma leaf, adds a silky texture, while pandan ice infuses subtle sweetness. Vetiver and lemongrass bring earth and citrus notes. It’s refreshing, complex and quietly playful.

Sour OK!
Tequila, Cherry Wood, Palo Santo, Whites, Coconut, Sago
An aromatic cocktail built on the global tradition of burning wood in ceremony—whether copal in Mexico or incense in Japan. The tequila is infused with palo santo and cherry wood, then milk-washed for smoothness. Finished with nata de coco and tapioca pearls, it’s floral, smoky and delicately layered.

Whip OK!
Tequila, Mezcal, Burnt Chilli, Lime, Blackberry Sorbet
Drawing on the ritual of making recado—a spice paste from blackened chillies—this cocktail blends heat and fruit in striking balance. It’s topped with a scoop of house blackberry sorbet and misted with silver-hued olive oil, referencing the folkloric belief in blessing drinks under moonlight.

The Ritual series joins Cantina OK!’s core menu, which includes cult classics like the Margarita OK! (served with hand-shaved ice), the chilli-spiked Spicy OK!, and the non-alc Viento OK! made with grapefruit and pink peppercorn.
