Sydney foodies, mark your calendars: the Sydney Opera House is set to host a four-night chef takeover from January 17th to 20th.
Dan Hunter, the celebrated chef behind the internationally acclaimed and three-hatted restaurant Brae, will bring his farm-to-table philosophy to the Yallamundi Rooms in collaboration with Danielle Alvarez, the Sydney Opera House’s own culinary director.
This exclusive dining experience titled ‘Harvest of Purpose’ presented by Trippas White Group (TWG), offers a six-course menu ($450) that’s as much a feast for the senses as it is for the palate. Each dish celebrates sustainability and craftsmanship, blending Brae’s rural style of cooking with Alvarez’s garden-to-table ethos. Expect highlights like Murray cod with crustacean butter and finger lime, fennel-rubbed pork loin with smoked cherry jus, and a sweet finish of strawberry gum ice cream with frozen passion fruit.
Dan Hunter shared his excitement, stating, “Cooking starts on the land. Bringing Brae’s approach to Sydney has been an enriching journey, especially collaborating with Danielle to honor NSW’s unique produce and people.” Alvarez added, “This menu is a tribute to our Australian landscape, designed to inspire and leave a lasting impact.”
The experience extends beyond the plate as the Yallamundi Rooms will transform into a nature-inspired haven, styled by Fiona Rae and featuring works from Australian artists Emma Davies and Katarina Wells. From intricate recycled material vessels to sea-inspired stoneware sculptures, these pieces echo the event’s sustainable ethos.
Wine pairings curated by award-winning sommeliers Louella Mathews and Polly Mackarel are also available to further elevate the evening, with classic ($265) and premium ($450) options spotlighting biodynamic and organic labels. For non-drinkers, bartender Lee Potter Cavanagh’s inventive tisanes and tinctures ($195) provide an equally compelling contender.
