Bar Tag Season Two: Henry Hammersla, Whisky Room

Bring on a whole new season of Bar Tag! First up, we visit Whisky Room at The Clock Hotel.

Bar Tag is back with a brand new set of bars, bartenders and wonderful cocktail creations. For those who missed out on Season One, Bar Tag is the fun game designed to challenge some of Australia’s best bartenders. Each nominated bartender must create an innovative, delicious cocktail using one key ingredient. The catch? That ingredient has been nominated by the bartender before them. Some of last year’s whacky nominated ingredients included winter melon, purple eggplant, Yakult, goon and more. You can watch it all right here. Ms Darlinghurst is now back for Season Two and in this first episode, Henry Hammersla from Whisky Room at The Clock Hotel is challenged by Tom from Chiswick to come up with a cocktail using Tonka beans.
Opening just shy of three years ago, Whisky Room is now home to over 200 unique whiskies. You’ll find it inside the Clock Hotel located in the heart of Surry Hills. The Clock is renowned for it’s epic people watching balcony upstairs, delicious drinks and friendly service. What are Tonka beans, you might ask? Did Henry Hammersla rise to the challenge? Watch the video and witness all the action for yourself.

With Henry’s intriguing Tonka Shuffle cocktail proving a hit, he next nominates Nicola from Goros, a late-night, Japanese themed Izakaya bar offering an array of delicious snacks and sake in Surry Hills. Nicola’s key ingredient is Lapsang Souchong. Yes, like the tea!

Tonka Shuffle Cocktail Recipe

Ingredients: 

  • 45ml Starward Single Malt whisky
  • 10ml Highland Park 12yo
  • 10ml Averna
  • 30ml tonka bean syrup (Chiswick)
  • 30ml banana shrub
  • 15ml fresh lemon juice
  • 20ml egg whites
  • 2-3 drops Angostura bitters

Method: 

  • Add all the ingredients to a cocktail shaker.
  • Shake and double strain into a chilled martini glass.
  • Grate whole Tonka beans over the top.
  • Peg a small sprig of baby’s breath on the rim of the glass for garnish.
