Inspired by Japanese listening lounges, Stellas offers guests a unique sensory experience, combining state-of-the-art loudspeakers and an inventive cocktail menu in a sophisticated setting.

St Kilda welcomes its newest and most stylish venue, Stellas, located within the recently opened Saint Hotel. As you step into Stellas, you’ll be captivated by the massive loudspeakers, the result of an innovative collaboration with Pitt & Giblin, creators of custom audio reproduction systems. These 9-feet tall Blackbutt timber speakers deliver unparalleled sound quality in Australia, setting the stage for a rotating lineup of local and visiting DJs every Friday and Saturday night. The impressive sound system adds to the distinct atmosphere of the venue, which features exposed brick, a Verde Alpi marble bar, and varying seating levels for a relaxed and inviting experience.

Bar Manager Roy Das Neves (Bouvardia, Lily Blacks) heads the drink selection, focusing on sustainable, seasonal, and inventive cocktails. Das Neves aims to achieve a zero-waste policy with a produce-driven menu, emphasizing minimalism and creativity. The cocktail menu highlights native Australian ingredients and features signature drinks like Channel Orange, Amazonia, and My Golden Girl, showcasing the unique flavors and profiles of the local region.

Head Sommelier Aleks Jeremic (The Atlantic, Cunard Line) has curated a selection of wines from local and interstate wineries, accompanied by an array of beers, ciders, seltzers, and spirits. Notable Victorian wineries on the list include Moorooduc Estate, Bannockburn Vineyards, and Syrahmi. Stellas takes pride in supporting local businesses and showcasing the best of what the region has to offer.

A delectable snack menu from the Saint Hotel kitchen pairs perfectly with the drinks, offering light options such as house-pickled crudités and natural oysters, as well as more indulgent choices like Macedon Ranges duck croquettes, Mayura Wagyu tartare on oyster crisp, and Grana Padano choux pastries filled with mushroom duxelles and smoked parmesan espuma. The carefully crafted food menu highlights the skill and talent of the Saint Hotel kitchen team, providing guests with a diverse selection of flavours to enjoy alongside their drinks.

Stellas, situated on the first floor of Saint Hotel, offers a relaxed atmosphere for guests to unwind and savour the exceptional music, cocktails, and cuisine. The venue is also available for private bookings outside its regular Friday-Saturday hours, making it an ideal location for special events and celebrations.
