Rustica has expanded its empire with a new café on Hampton Street, Brighton. This marks their fifth location in Melbourne. Known for artisanal baked goods and a vibrant atmosphere, Rustica Brighton brings a fresh seaside twist.

Rustica Bakery, a brainchild of founder and acclaimed baker Brenton Lang, first graced Fitzroy in 2012. Its reputation was built on the traditional sourdough techniques used to craft its artisan bread and pastries. This approach quickly propelled Rustica to the forefront of Melbourne’s bakery-cafe scene. Over the years, Rustica has blossomed into a beloved brand with five locations across the city. These include Highpoint, Rialto Towers, Queen & Collins Street, South Yarra, and the latest addition, Rustica Brighton, each adding its unique charm to the local culinary landscape.

EAT: Seaside Flavours in Every Bite

The 125-seat café serves up Rustica’s famed pastries and breads. It also offers an all-day menu. Head Chefs Sidney Tor and Sam Tacussel blend Rustica’s charm with Brighton’s coastal vibe. The menu features items like lemon curd French toast and a lobster-prawn Benedict. It showcases Melbourne’s culinary diversity with a focus on fresh, local produce.

Rustica Brighton is a haven for coffee lovers. Their First Love Coffee is a rich blend of beans from across the globe. The café also offers monthly rotating single-origin coffees. Fiona Drago, a long-time Rustica collaborator, designed the café. It mirrors the seaside setting. The interior features natural tones and materials like timber and bronze. These create a welcoming environment. The high ceilings and large windows fill the space with natural light. Green acoustic felt columns reduce noise while enhancing the beachy feel.
